Roasted Green and Red Pepper Dip for Holiday Parties:
1 diced red bell pepper
1 diced green bell pepper
1 Tbsp fresh parsley
2 Tbsp lemon juice
1 garlic clove-minced
1 1/2 cup fat free plain yogurt
1/2 cup fat free sour cream
Paprika
 
Place diced peppers on a baking sheet and roast under broiler for 5 minutes per side.  Mix parsley, lemon juice, garlic, yogurt, and sour cream in a blender until smooth.  Add in peppers and blend until mixed.  Add a dash of paprika and serve with carrots, broccoli, cucumbers, cherry tomatoes, string beans, or whole wheat toasted pita.
