Lasagna Soup
1 lb of 94% fat free ground beef or 99% fat free ground turkey breast
2 cups diced yellow onions
2 Tbsp minced garlic
2 cups mushrooms
1 cup diced carrots
1 14 oz can diced tomatoes
1 10 oz can tomato sauce
1 tsp oregano
1/4 cup basil
4 cups reduced sodium chicken broth
2 cups fresh spinach
1 cup Mafalda Pasta whole wheat
1/4 cup reduced fat Italian cheese
1/4 cup parm cheese
 
Brown meat and add onions and garlic and sautee for about 5 minutes.  Then add chicken broth, mushrooms, carrots, tomatoes, and tomato sauced and bring to a boil.  Next add oregano, basil, uncooked whole wheat pasta and let simmer for about 15 minutes or until pasta is cooked.  Add in spinach and let sit for 5 minutes.  Pour into bowl and add a pinch of cheeses to the top of the soup.  Serving size 1 cup.  Enjoy!
