Healthy Taco Casserole
1 lb ground turkey breast
8 oz whole wheat rotini
1 packet of low sodium taco seasoning
1 small onion- chopped
1 small green pepper- chopped
1 8 oz can tomato sauce (no salt added)
1 15 oz can tomato sauce (no salt added)
16 oz fat free sour cream
1 cup fat free mozzarella
1 cup reduced fat mexican cheese
baked tortilla chips- crushed
Heat oven to 350 degrees. Brown the ground turkey breast. Cook the noodles. Mix taco seasoning, and tomato sauces in with browned turkey breast. Add rotini to the meat mixture. Let simmer for 5 minutes. Mix in the sour cream and cheese. Pour into a casserole dish and bake for 25-30 minutes. Top with 1/2 cup of mexican cheese and crushed tortilla chips. ENJOY!
