Chili-Lime Shrimp Skewers
12-14 oz shrimp
2 Tbsp fresh cilantro, chopped
1 Tbsp minced jalapeno pepper
2 Tbsp fresh lime juice
1 tsp dried oregano
1 tsp chili powder
1 tsp olive oil
1/2 tsp salt
1/2 tsp pepper
1 garlic clove, minced
8 cherry tomatoes
1 small onion
1 yellow pepper
cooking spray
 
Peel shrimp, leaving the tails on.  In a bowl, mix the cilantro and the next 8 ingredients (through the garlic).  Add shrimp, tomatoes, chopped onion and yellow pepper.  Refridgerate for an hour to allow marination.  Remove shrimp, tomatoes, pepper, and onion from the bowl and keep the mixture.  Put everything onto a skewer and place over medium heat on the grill for 3-5 minutes on each side.
Serve with Orzo, Quinona, Brown rice, or cous cous.
